Chop the cassava and blend it with water for about 3 minutes, working in batches if needed.

Strain the blended mixture through a fine sieve. Save the solids left in the strainer to make small breads or arepas with cheese.

Let the strained liquid sit undisturbed for 24 hours to allow the starch to settle.

After 24 hours, carefully pour off the water. The starch will be left at the bottom of the container.

Spread the starch on a tray and let it dry in the sun for a day.

Once dry, process the starch and sift it well to get a fine powder.

That's it! Store the starch in a zip-top bag.
