Ingredients

4-6 individual servings
  1. Nacho Mix
  2. 150 gTVP - (you can use anywhere between 100g-200g - we tend to use 200g for the high protein)
  3. 1 Tin3 Bean Mix
  4. 1 TinCorn Kernels (or equivalent 250g~)
  5. Capsicum (use a variety of colours for health benefits - we often add green ones too)
  6. 2 PacketsTaco Spice Mix
  7. 1Large Brown Onion
  8. Pepper to taste
  9. Cheese Sauce
  10. we just use the first part of the ingredient list not the 'nacho cheese sauce' part
  11. Guacamole
  12. 1-2Large Avocados (dependent on how much guac you want - I love it so I go overkill lol)
  13. Halfa Lemon
  14. Salt and Pepper to taste
  15. OPTIONAL - 1 large Lebanese cucumber diced into small pieces
  16. Cornchips
  17. Cornchips

Cooking Instructions

    Soak 1 cup of Cashews in water for 3hours+ (overnight ideally).

    Soak TVP for 20minutes+ prior to cooking.

    Dice onion and saute in some olive oil in a pan on medium heat.

    Cut capsicum into preferred size ready for cooking.

    Drain the tin of beans and corn (if you bought tinned corn) in a strainer.

    Once you're nearly finished sauteing the onion push all the onion to the outer edges of the pan and empty the two packets of spice mix into the centre then spread the spice mix out to make it as thin as possible touching the bottom of the pan (not over the onion) - this is to help bring the flavours out of the spices.

    Empty 80%~ of the water out of the TVP.

    After the spices have been heating up for 5-10minutes add the TVP, corn, beans and capsicum then mix through, you'll likely need to add a little bit of water - add a little as required to make a nice consistency for the mix (you don't want it runny but you want some liquid as it will help steam the veggies - you also don't want it thick lol), place a lid on and let it cook on low-medium heat for about 15minutes stirring occasionally.

    Once you're happy with the consistency and flavours turn the heat off and let it stand for a few minutes prior to serving.

    I'm sure you don't need me to tell you how to smash avo, add lemon juice, salt and pepper so I'll leave the Guac up to you haha.
