Cut the tomatoes into wedges and then chop them. Sauté the white part of the green onion until fragrant, add the pork belly and stir-fry, then add peeled shrimp and tomatoes. Stir-fry together with a pinch of salt.

Add water and bring to a boil. Add the hủ tiếu noodles and cook until tender, seasoning with a little fish sauce.

Transfer to bowls, top with green onions, cilantro, and ground black pepper. Serve with shredded banana blossom on the side.
