In a bowl 🥣, break eggs 🥚, add spring onions finely chopped, crushed garlic 🧄, finely chopped green chillies, chopped tomato 🍅, finely chopped basil leaves 🌱, curry powder, garam masala powder, salt 🧂, finely chopped coriander leaves 🌿, finely chopped capsicum 🫑, coriander cumin powder, red chilli flakes🌶️ and mix herbs

Mix everything together, using a folk, till well combined, in a pan add oil, spread it over the pan and lightly heat it up for 1 min, pour the egg mixture 🥚in the pan and spread out the veggies evenly if you want to, add mozzarella cheese 🧀 on top, before the mix starts getting cooked.

Cover and cook for about 2 mins on medium heat, till the cheese 🧀 has melted and the bottom has firmed up a little, then flip the egg mixture 🥚 to the other side and, add few drops of oil from sides, cook for another 1 min, till the egg is fully cooked and then turn off the heat, take the omelette off the pan, serve with toasted buns and bread slices 🍞.

For toast bread 🍞: in a bowl 🥣, add butter 🧈/ margarine, black pepper powder mix together, till combined, spread on bread slices 🍞 / buns, cook till golden on low medium heat, add above omelette and serve.
