Preheat the oven to Gas Mark 9.
Fill a large metal Mixing Bowl with lots of cold tap water and then allow the defrosted Partridges to soak in the large amount of cold tap water. Over the mixing bowl stick 2 of your Fingers into the cavity of the Partridges and then clean it's outer flesh areas. Water wash under the cold water tap and then place the 2 Partridges on a Dinner Plate - 2
Place at least 4 tablespoons of Vegetable Oil in a non-stick Frying Pan that is also Oven proof (no Plastic coated handle) and then on the highest hob heat give the 2 raw Partridges 2 minutes on each side and then place them in the oven for 10 minutes Remove and then rest and cool in the Frying Pan with Kitchen Foil over the top and allow too rest for 5 minutes

Place Shop bought Frozen Chips into a small Air Fryer and then cook on the highest setting for 15 minutes. Give the basket a shake every 5 minutes. Add homemade Mustard Mayonnaise too the Dinner Plate and then add the cooked Chips and then add the 2 cooked Partridges
