Ingredients

Serves 4 servings
  1. 1 cupsprouted moth beans, coarsely ground into a paste (about 200 grams)
  2. 1/2 cupsoaked split chickpeas (chana dal), coarsely ground (about 100 grams)
  3. 1/4 cupsoaked split chickpeas (chana dal) (about 50 grams)
  4. 1 1/2 cupsbread crumbs (about 90 grams)
  5. 1/2 cupfinely chopped onion (about 75 grams)
  6. 1 tablespoongrated garlic (about 15 grams)
  7. 1chopped green chili
  8. A fewchopped mint and cilantro leaves
  9. Salt to taste
  10. 1 teaspoonchili flakes
  11. 1 teaspoongaram masala
  12. 1/2 teaspoondried mango powder (amchur)
  13. Vegetable oil, as needed, for frying

    First, coarsely grind 1 cup sprouted moth beans and the soaked split chickpeas (chana dal). Gather all the ingredients together.

    Add all the ingredients to a bowl, then add salt and all the spices. Mix well.

    Heat oil in a deep pan over medium heat. Shape the mixture into vadas (patties) and fry until golden brown.

    For the chutney, blend a few mint leaves, cilantro, 2 green chilies, salt, and some ice cubes in a blender. Add half a lemon and blend again to make the chutney.
