Kheer (Rice Pudding)

Kheer, also known as payasam or payesh, is a pudding/porridge popular in the Indian subcontinent, usually made by boiling milk, sugar, jaggery or condensed milk and rice. It can be additionally flavored with dried fruits, nuts, cardamom, nutmeg and saffron.

Wash and sock the rice for 5-7 minutes.
Boil the milk in a heavy bottom pan.
When milk starts boiling,add socked rice in the milk and stir well.
Boil the milk on a slow flame till the rice gets cooked. - 2
Now Add Condensed milk and stir continuously.
Make sure the milk doesn't get burned.
When you see milk reduced, now time to add half of almond flakes and cardamom nutmeg powder.
Continue stir.
When milk starts to thicken, switch off the flame and let the kheer cool down at room temperature.
After that put it in the fridge to get cold. - 3
If you are in a hurry,then put it in the freezer.
After getting cool,remove from the fridge, transfer the kheer into the serving bowl.
Sprinkle remaining cardamom nutmeg powder and almond flakes.
Serve immediately.
