Quick and Easy Chickpea Fritters (Like Grandma’s, but with Canned Chickpeas)

My grandma used to make these with leftover (cooked) chickpeas, and we loved them! But here, I can only find canned chickpeas. That’s the only difference in this recipe. I also make a much smaller batch.
They turn out delicious—crispy on the outside and soft on the inside!

Rinse and drain the chickpeas.

Blend all the ingredients together in a blender.
Alternatively:
Mash the chickpeas by hand (for example, with a potato masher), grate the onion and garlic, finely chop the parsley, and mix everything well. - 3
Taste the mixture and adjust to your liking by adding more of any ingredient if needed.

Shape into 10 fritters.

Heat plenty of oil over high heat and fry the fritters on both sides.
They cook very quickly, so keep an eye on them to prevent burning.

Serve immediately with a dip or sauce: yogurt dip, spicy feta dip, tzatziki, plain yogurt, hummus, or another favorite.
In the photo, I served them with rice mixed with 1 tablespoon of mayonnaise while hot to make it creamy.
