I made this for my wedding anniversary as a surprise for my husband, and he was so happy! This was my first time ever making a torte. I wanted to make it two layers, but I ran out of time, so I just made one. Honestly, it didn’t look great 🙈😅 and wasn’t perfect, but the cake turned out really successful, soft, and it just melts in your mouth—that’s the best part! Even though my husband doesn’t usually like tortes or whipped cream, he really loved this one, and I was so happy that my effort paid off 😂😂😂😂😂. I hope if you try it, you’ll like it too. The ingredients are for a small pan; if you’re using a regular-sized pan, just double the ingredients. 👍

First, separate the egg whites from the yolks and place each in a different bowl.

Beat the egg yolks well with a hand whisk, then add half the sugar (1/2 cup) and beat until well combined and thick. Gradually add the milk while whisking until fully mixed, then slowly add the oil in a thin stream while whisking until smooth.

Add the vanilla extract and a pinch of salt, and mix well. Add the flour in two batches, sifting it before adding to help incorporate air. Mix until smooth, then set this bowl aside.

Wash the whisk thoroughly, then in the other bowl with the egg whites, beat well. Add the remaining 1/2 cup sugar and beat for 5 minutes until thick and creamy. Add the vinegar and baking powder, and beat well.

Combine all the ingredients in the first bowl and mix well until fully combined. Pour the batter into a baking pan greased with a little oil and dusted with flour. Bake in a preheated oven at 300°F (about 165°C) for 1 hour.

After baking, turn on the oven’s top heat for just 3 seconds, then remove the cake and let it cool to room temperature. Decorate as you like, and serve after it has cooled with a nice cup of milk tea. 😋
