Hopping John
Traditional southern dish for New Years. Great with cornbread!
Cooking Instructions

Soak the black-eyed peas overnight in water to cover by 2 inches. Drain well.

In a large pot, combine the drained black-eyed peas, ham hock, bay leaves, garlic and water. Bring to a boil, reduce to a high simmer, partially cover and cook until the peas are almost tender, about 45 minutes.

Meanwhile, remove the casings from the chorizo or prick the sausage in several places with the tines of a fork. Fill a medium skillet with about 1/8 inch of water. Add the sausages and bring to a boil over medium-high heat. Cook the sausages until cooked through, about 10 minutes. Set them aside and discard the cooking juices. When cool enough to handle, cut the sausages into 1/2 inch dice.

Add the sausage, rice and salt to the pot, recover and cook until the rice is tender, about 20 minutes. Stir in the scallions and bell pepper about 10 minutes before the rice is done. If desired, pull off any meat from the ham hocks and add to the pot. Discard the bay leaves.

In fact I have yet to come across a southern dish or recipe that didn't end with an empty plate.Hoppin' John is a classic southern recipe traditionally eaten on New Year's Day to bring a prosperous year filled with luck. The name has been given many different origin stories over the years however I always thought it was due to the abundant spices added into the seasoning causing the diner to "hop" from the heat. If you’re gonna fry fish around here you MUST have hushpuppies. These are crisp on the outside and soft and fluffy on the inside. This is a BASIC recipe and you can add anything you want to them. What do you do when Peapod sends Cannellini Beans instead of Split Peas? Make Johnny Soup instead. I was skeptical at first, but once I smelled the aromas from the slow cooker I was hooked.For this soup, we used leftover ham, but you can use a ham steak, ham hock, etc. You can also use stock or broth, but just plain water was really good. It is up to you. This is basically the same recipe as my Slow Cooker Split Pea Soup, which is really good. It is all good, but I really love the carrots in it. There is just something so good about carrots from the slow cooker.Good luck during those 8 hours that it is cooking. I wanted to eat asap, but I had to wait. It was so good, that even my fussy son liked it. And he does not like soup.Enjoy! J.A.B. -

I don’t have a picture of my soup. The reason it’s called Swamp Soup is cuz it looks like something you’d find in the swamp, kinda grassy, with chunks and bits. It goes great with some cornbread.
