I had two cucumbers left after a bargain purchase, so I decided to make a salad that could also be a side dish using ingredients I had in the fridge. Even though I don't like spicy food, both my kids and I love this salad!

Cut the cucumbers in half lengthwise, then slice each half into about 10 pieces.

Lay the knife flat and lightly smash each cucumber piece to crack it. Repeat with the other cucumber.

Sprinkle with salt and gently massage it in.

Slice the ginger thinly, then cut into thin strips. Cut the green onion lengthwise, remove the core, cut into about 4 pieces, and slice into thin strips.

Soak the ginger and green onion in water.

Mix the soy sauce, sugar, vinegar, sesame oil, and chili bean paste well.

Bring plenty of water (not listed in ingredients) to a boil with a pinch of salt (not listed in ingredients). Once boiling, turn off the heat and add the pork, swishing it around until cooked.

Once the pork changes color, transfer it to water to cool, then drain well.

Add the drained cucumbers, pork, ginger, and green onion to the mixed dressing and mix well. Sprinkle with ground sesame seeds to finish.
