Ingredients

  1. 7 tablespoonsunsalted butter (about 100g)
  2. 3 tablespoonssuperfine granulated sugar (about 40g)
  3. 2 tablespoonsmilk (about 25ml)
  4. 1/3 cupalmond flour (about 35g)
  5. 1/2 teaspoonsalt (about 2g)
  6. 1 cupEdam cheese powder (about 100g)
  7. 3/4 cupall-purpose flour (about 100g)
  8. 3 tablespoonscornstarch (about 22g)

Steps

    Cream the butter, which has been brought to room temperature.

  2. 2

    Mix the creamed butter with granulated sugar, milk, almond flour, and salt.

  3. 3

    Add Edam cheese powder, sifted flour, and cornstarch to the mixture, and mix by pressing the flour into the dough.

  4. 4

    Form the dough into a single mass, roll it out into a square about 1/16 inch thick on a sheet of plastic wrap, and let it rest in the refrigerator.

  5. 5

    After resting in the refrigerator for at least 1 hour, cut the firm dough into 1/5 inch wide strips, then cut again into bite-sized pieces about 1 inch wide.

  6. 6

    If the dough is difficult to handle, you can freeze it until it's very firm before cutting. In fact, this might be easier. Haha.

  7. 7

    Since the cookies tend to spread, space them out on a baking sheet and bake in a preheated oven at 320°F until golden brown, about 15 minutes.
