Chilled Soba with Mushrooms and Grated Daikon (Perfect for Summer Meals)
Great for lunch or dinner!
Recipe background: I created this easy-to-eat soba dish for those hot days when you might not have much of an appetite.

Cut the mushrooms into bite-sized pieces. Boil them, then cool in cold water and drain well. Boil the nameko mushrooms whole without cutting.

Once the mushrooms are well drained, add the dipping sauce for mushrooms and let them chill in the refrigerator for about 2 hours.

Grate the daikon radish and chill it in the refrigerator. Use store-bought or homemade soft-boiled/poached eggs.

Cook the soba noodles to your preferred firmness, then rinse well in cold water.

Place the soba noodles on a plate and top with grated daikon, mushrooms, soft-boiled egg, chopped scallions, shredded nori, and wasabi.

Pour the diluted soba dipping sauce over the top and enjoy!

This is also delicious with mountain vegetables, nameko mushrooms, and grated daikon.
