Put the potato starch in a plastic bag, add the chicken cut into 1-inch pieces, and shake to coat evenly. Inflating the bag and shaking makes it easier to coat the chicken.

Heat a skillet and add the vegetable oil. Place the chicken skin-side down and cook with a lid on for about 2–3 minutes per side, until nicely browned.

Once both sides are browned, blot any excess oil with a paper towel, reduce the heat to low, and add the sauce mixture.

Cook until the sauce thickens and coats the chicken with a glossy finish.
