This is the pizza sauce recipe I have perfected through trial and error, but now my boss, who is a 5-star chef, tells me it's the best pizza sauce he's ever had. The most important things to remember are:
1. Don't use the cheapest cans of tomato paste and tomato sauce, if you can avoid it, they are too metallic and sour.
2. Don't forget to add the sugar.
3. Let the sauce sit overnight in the refrigerator for best results. If you don't have that long, then make the sauce before you make your pizza dough and let it sit while you prepare the rest of the pizza.

Ingredients

30 mins
1 pizza
  • 75 gramstomatoes
  • 6 oztomato paste
  • 1 cuptomato sauce
  • Olive oil
  • Halfsmall onion
  • 2 clovesgarlic
  • Handfulfresh basil
  • 1/2 TBSPoregano
  • 1/2 TBSPdried basil
  • 1 tsppaprika
  • 1/2 tspchili powder
  • 1 tspsugar

Steps

    Chop the onions and garlic roughly.

  2. 2

    In a pan over medium heat, pour the olive oil and add the onions and garlic. Cook for a few minutes, until the onions begin to be transparent. In the meantime, chop the tomatoes.

  3. 3

    Add the tomatoes, paste, and sauce to the pan. Stir for a minute.

  4. 4

    Add all the rest of the seasonings and transfer the sauce to a blender.

  5. 5

    Blend on medium until it reaches the desired consistency. Taste. If too acidic, add a little more sugar.
