Ingredients

  • 1 lbspaghetti noodles
  • 1 lbspicy ground Italian pork sausage
  • 1 lbground beef
  • 1yellow onion; small dice
  • 2 Tfresh rosemary; minced
  • 2 Tfresh oregano; minced
  • 1 Tcrushed pepper flakes
  • 2 tfresh thyme; minced
  • 6garlic cloves; minced
  • 1/2 Cmerlot
  • 29 ozcrushed tomatoes
  • 14.5 ozdiced tomatoes
  • 10.75 oztomato puree
  • 1bay leaf
  • 1large pinch sugar
  • 1/4 Cred wine vinegar
  • 3/4 ozfresh basil; chiffonade
  • 1/2 bundleparsley; minced
  • 8 ozmerlot-parmesean cheese
  • as neededkosher salt & freshly cracked black pepper

Steps

  1. 1

    Heat a large saucepot with no oil.

  2. 2

    Add ground beef, pork, and onions. Season with rosemary, thyme, oregano, crushed pepper flakes, salt, and pepper.

    When meat is nearly browned, add garlic. Cook 1 minute. Add red wine and bay leaf. Reduce until nearly dry.

  4. 4

    Add tomatoes. Stir. Bring to a simmer. Cook uncovered, stirring occasionally, for 1 hour.

  5. 5

    Remove bay leaf. Add sugar and vinegar. Cook 2 minutes.

  6. 6

    Toss noodles with about 3/4 of the cheese and just enough sauce to cover. Ladle more sauce atop to serve as desired.

    Garnish with basil and remaining cheese.
