First, make the soup base and bring it to a boil, then add your chosen ingredients.

Note 1: If you’re adding a lot of napa cabbage (which releases water), use 4 cups for a richer flavor.

Note 2: If you’re using ingredients like burdock root, carrots, meats, or fish cakes (which don’t release much water), 5 cups is just right.

Sliced burdock root (use a vegetable peeler) is delicious in this hot pot. For the finishing touch, add udon noodles—they’re fantastic!
