Ingredients

  1. Chanko Soup Base
  2. 4–5 cups (800–1000 ml) water
  3. 3 tablespoonsmirin
  4. 2 tablespoonssoy sauce
  5. 1 tablespoonlight soy sauce
  6. 1 tablespoonoyster sauce
  7. 1 tablespoonJapanese soup stock granules (dashi powder)
  8. Grated ginger, to taste (optional)
  9. Any ingredients you like for the hot pot

Steps

  1. 1

    First, make the soup base and bring it to a boil, then add your chosen ingredients.
    *See notes 1 and 2 for water amount.

  2. 2

    Note 1: If you’re adding a lot of napa cabbage (which releases water), use 4 cups for a richer flavor.

  3. 3

    Note 2: If you’re using ingredients like burdock root, carrots, meats, or fish cakes (which don’t release much water), 5 cups is just right.

  4. 4

    Sliced burdock root (use a vegetable peeler) is delicious in this hot pot. For the finishing touch, add udon noodles—they’re fantastic!
