Steps
- 1
Cut the broccoli into bite-sized pieces.
- 2
Place the broccoli with the stems up and sprinkle generously with salt and pepper.
- 3
We use a pre-mixed salt and pepper at home!
- 4
Make the batter much looser than regular tempura. Mix the flour, mayonnaise, and water. (If you have a lot of broccoli, you can use an egg instead)
- 5
The batter should be very loose, like this.
- 6
Sprinkle plenty of salt and pepper into the batter.
- 7
First, coat the florets of the broccoli, making sure the batter covers everything. The florets repel water and batter, so adding flavor to the batter is key!
- 8
Fry with the stems down at 265–285°F (130–140°C). As they fry, they will become unstable and float up.
- 9
The broccoli becomes sweet, so use a little extra salt and pepper. It's delicious when it gets slightly browned!
- 10
It's also tasty in a lunchbox!
