Add the ♣ soba broth ingredients to a pot and bring to a boil. Break apart the mushrooms, and cut the enoki in half after breaking apart. Add to the pot and simmer briefly.

Cook the soba noodles slightly firmer than the package instructions (for kake soba). Mix ★ ingredients well.

Bring the soba broth to a full boil, then turn off the heat and gradually add the ★ mixture while stirring with a ladle. Turn the heat back on and bring to a boil again to thicken.

Place the well-drained soba noodles in a bowl and pour plenty of soba broth over them. Add green onions and ginger, and if available, boiled greens like spinach or komatsuna.

For added flavor, you can include thinly sliced fried tofu with the mushrooms.
