Restaurant Secret: Onion Gratin Soup

The origin of this recipe: About 20 years ago, a friend who was a chef at a French restaurant in Sapporo told me that they fry the onions for their onion gratin soup instead of sautéing them in butter. Since then, we've been frying the onions for our onion gratin soup at home. The recipe photo shows the final step of baking in a toaster oven.

Lightly toast the baguette and thinly slice the onion. In a pot, bring water and the ingredients marked with * to a boil to make the soup.

(Using 2 bouillon cubes for 2 1/2 cups of water makes it too strong, so use 1 cube and adjust the taste with salt. Soy sauce is a secret ingredient.)

Fry the sliced onions until brown. Fry slowly at a low temperature. (Depending on the oil temperature, this takes about 6 to 8 minutes.)

← After frying, thoroughly blot the oil with a paper towel and add to the soup from step 2. (Let the fried onions sit for a while to remove excess oil.)

Pour the soup from step 1 into a cup, add the toasted baguette, top with cheese, and microwave for 50 seconds to 1 minute until the cheese melts.

← Traditionally, this is baked in an oven, but microwaving to melt the cheese is fine. This is my way. (^^ゞ

← For a more traditional finish, bake in an oven or toaster oven after placing in a dish. The recipe photo shows it baked. ^^
