Knead the dough ingredients in a bowl.

Cover the bowl with plastic wrap and let it rise in the oven at 95°F (35°C) for 30 minutes for the first proofing.

Gently punch down the dough. Divide it into 8 pieces, shape into balls, cover with a damp cloth, and let rest for 10 minutes. You can also place them in a container with a lid.

Place the side of the dough that was facing down on top. Lightly flatten it.

Roll from one end to form a log shape.

With your hand on the right half of the dough, roll it into a teardrop shape.

Position the narrow end of the teardrop shape towards you.

Hold the dough with one hand. Roll the rolling pin from front to back. Stretch it to about 8 inches (20 cm).

Gently pull the thicker end to the sides while rolling it towards you. Place the seam side down. Shape and lightly press from above.

Line a baking sheet with parchment paper and arrange the dough on it.

Let it rise in the oven at 95°F (35°C) for 28 minutes for the second proofing. It should increase to about 1.5 times its size.

Preheat the oven to 355°F (180°C). Brush with the finishing beaten egg. Dilute the beaten egg with a little water to prevent burning.
