Zucchini is often used in Western or Chinese recipes, but I wanted to enjoy it in a Japanese style. I combined it with pork, which is great for recovery from fatigue, and made it a simple sweet and savory dish perfect for summer.
Cooking Instructions

Wash the zucchinis, cut off the ends, and chop into bite-sized pieces. (Peel the tough stem area for easier eating)

Season the pork with salt and pepper. Mix the soy sauce, sugar, sake, and mirin together.

Heat a frying pan over medium heat, add olive oil, and stir-fry the pork.

When the pork is about halfway cooked, add the zucchini and stir-fry together.

Once the zucchini becomes translucent, mix the sugar settled at the bottom of the sauce well and add it to the pan. Continue to stir-fry.

When the liquid starts to evaporate, add the vinegar and stir to distribute evenly.

Once most of the liquid has evaporated, it's done♪
