Ingredients

Serves 3–4 servings
  1. 2(about 360–400g) zucchinis
  2. 250–300g pork (any cut, thinly sliced or chopped)
  3. Salt and pepper, to taste
  4. 1/2 tablespoonolive oil
  5. 3–4 tablespoons soy sauce
  6. 2 tablespoonssugar
  7. 2 tablespoonssake
  8. 2 tablespoonsmirin
  9. 1 teaspoonvinegar
  10. Sesame seeds, for garnish (optional)

Cooking Instructions

  1. 1

    Wash the zucchinis, cut off the ends, and chop into bite-sized pieces. (Peel the tough stem area for easier eating)

    Season the pork with salt and pepper. Mix the soy sauce, sugar, sake, and mirin together.

  3. 3

    Heat a frying pan over medium heat, add olive oil, and stir-fry the pork.

  4. 4

    When the pork is about halfway cooked, add the zucchini and stir-fry together.

  5. 5

    Once the zucchini becomes translucent, mix the sugar settled at the bottom of the sauce well and add it to the pan. Continue to stir-fry.

    When the liquid starts to evaporate, add the vinegar and stir to distribute evenly.

    Once most of the liquid has evaporated, it's done♪

    In the photo, I sprinkled sesame seeds on top (*´꒳`*). It's delicious even when cold♪
