Fluffy Omurice with Tomato Sauce

I had some leftover tomato sauce and wondered if I could use it with ingredients from my fridge, so I made this omurice. My high school-aged son really liked it.

I created this dish because I had a bit of tomato sauce left and wanted to make something using only what I had in the fridge. Normally, omurice uses chicken rice, but since I didn't have chicken, I used pork instead. Even if you don't have tomato sauce, ketchup works just fine and tastes great.
Fluffy Omurice with Tomato Sauce

Crack the eggs into a bowl, beat gently to break up the whites, and season with salt and pepper. Slice the pork into 1/4-inch (5mm) strips and season with salt and pepper. Roughly chop the onion.

Strain the tomato sauce through a sieve into a saucepan, add 1 teaspoon Worcestershire sauce and 2 tablespoons ketchup, and heat until warm.

Heat 1 tablespoon each of vegetable oil and olive oil in a wok or large skillet. Add the onion, then the pork, and sauté.

Once the pork is cooked through, add the rice and stir-fry until heated and no clumps remain. Add 3 tablespoons ketchup and salt and pepper, and mix well.

Scoop 1/3 of the rice into a small bowl or rice bowl, press gently with a rice paddle, cover with a plate, and invert to unmold the rice onto the plate.

Heat a frying pan, add 2 teaspoons olive oil and 1 teaspoon butter, and melt. Pour in 1/3 of the eggs, cook over medium-high heat, stirring lightly and gathering the eggs to the center.

When the center is still soft and creamy, slide the eggs from the pan to cover the rice. Wipe the pan with a paper towel and repeat two more times.

Drizzle the tomato sauce over the top, sprinkle with parsley, and serve.
