Cooking Instructions

Remove the yellow fat from the chicken and cut through the white tendons with a knife. To prevent shrinkage, poke the skin with a fork.

Place the chicken skin-side down in a frying pan (do not add oil). Cook over medium heat for about 6 minutes, absorbing the fat with a paper towel as it renders.

Once the skin is golden brown and crispy, flip the chicken and cook for another 6 minutes. Absorb the fat, then add the sauce ingredients.

Occasionally shake the pan and simmer until the sauce thickens and almost no liquid remains.

Once cooled slightly, cut the chicken into bite-sized pieces and serve on a plate with your choice of side dishes.
