Melt-in-Your-Mouth Napa Cabbage and Pork Udon Hot Pot

When I found a half head of napa cabbage for just 98 yen, I wanted to make a side dish. My youngest, who loves udon, kept asking for it, so I decided to cook them together. The result was a super tasty udon that my youngest absolutely loved!

When I found a half head of napa cabbage for just 98 yen, I wanted to make a side dish. My youngest, who loves udon, kept asking for it, so I decided to cook them together. The result was a super tasty udon that my youngest absolutely loved!

Wash the napa cabbage. Slice the stem lengthwise along the grain.

Roughly chop the leafy parts both lengthwise and crosswise. This uses up a lot of cabbage!

If using a clay pot (donabe), always start on low heat and only increase to medium after adding water to prevent cracking.

Add a little oil to the pot and gently warm it over low heat. Add the pork and sauté over medium heat.

When the pork is halfway cooked, add the garlic paste, mix, then pour 4 tablespoons soy sauce around the edge of the pot and add the cooking sake.

Add the cabbage stems and sauté.

If you’re worried about burning or cracking the clay pot, you can sauté the pork and cabbage stems in a skillet up to this step, then transfer to the pot.

You can also use a metal pot instead of a clay pot.

Add 4 1/4 cups water (1000 ml) and 1 bouillon cube, then add the cabbage leaves.

Cover and bring to a boil over high heat.

Once boiling, uncover, stir, then cover again and simmer on low until the cabbage is very soft and tender.

When the cabbage is meltingly tender, taste and adjust the flavor with another tablespoon of soy sauce and a pinch of salt if needed.

Add as much frozen udon as you’d like. Regular udon works too, but frozen udon has a chewier texture. Use whichever you prefer.

Loosen the udon noodles.

Cover and bring to a boil again. It’s ready to serve!

The tender napa cabbage and flavorful broth are so delicious and warming. Top with green onions if you like.
