Ingredients

Serves 1 serving
  1. 1serving udon noodles (cooked or frozen, any type)
  2. 3 1/2-4 tablespoonswhite dashi (50–60 ml)
  3. 1 cupwater (250 ml)
  4. 1/2 tablespoonmirin
  5. 1 pinchsalt
  6. 1egg
  7. Vegetables, wakame seaweed, or other toppings, as desired

Steps

    Combine the water, white dashi, and mirin in a pot and bring to a boil. Add the udon noodles and vegetables, then simmer over medium-low heat for the time indicated on the noodle package.

    How to make beautiful fluffy egg:
    Once the udon is tender, set the heat to medium. Wait until the broth is bubbling.

  3. 3

    Pour the beaten egg in all at once. Wait about 5 seconds until the egg starts to set, then gently stir with chopsticks to break it up softly.

    This method will give you beautiful, fluffy egg in your soup.
