Cut the dried grass jelly leaves into sections and rinse them at least 3 times. Place them in the inner pot and add water up to the 10-cup mark (about 10 cups/2.4 liters). Add 6 cups of water to the outer pot. (If you want a darker color, use 5 cups of water in the outer pot, then add 1/4 teaspoon baking soda, and finally add 1 more cup of water to simmer.)

Once cooked, let it cool slightly and strain out the grass jelly leaves.

Pour the strained grass jelly liquid into a pot and simmer a bit longer. Taste before adding sweetener to check the bitterness. Add crushed winter melon sugar bricks and cook until dissolved and boiling. Adjust sweetness to your liking. You can also use rock sugar instead of winter melon sugar. Let it cool and refrigerate for a refreshing grass jelly tea.
