Pineapple Cakes (No Beating Required)

Previously, the pineapple cakes I made required hand-beating the butter, which often resulted in inconsistent texture. After attending a class, I found this recipe and method much simpler, and the texture is excellent. They're so delicious that my child can eat three at a time, and even friends who tried them said they were great.
Tips
If you don't have a pineapple cake mold, you can use a cookie cutter or shape them into circles.
Every oven is different, so you'll need to adjust the time and temperature accordingly.
If you don't have fresh pineapple to make the filling, you can use regular pineapple, or you can buy pineapple filling from a baking supply store.

Shred 2 pineapples and cook with 2 tablespoons of maltose for about 2 hours until the pineapple juice is reduced. Let cool and shape into balls, 15g each.

Prepare the ingredients for the dough.

Place all the dry ingredients in a large tray, make a well in the center, and add the butter and eggs.

Press the mixture into a dough by hand until it's not sticky. (If it's too wet and sticky, add 20g more flour due to varying egg sizes.) (This recipe can be handled without refrigeration.)

Divide the dough into 25g portions. This recipe makes about 42 pieces.

Flatten each dough portion into a shape that's thicker in the middle and thinner around the edges. Place the pineapple filling from step 1 in the center and wrap it up.

Place in a mold, press flat with your hand, and place on a baking sheet.

Once all are wrapped, place them in a preheated oven at 340°F (170°C) and bake for 25-30 minutes. Since oven temperatures vary, adjust the time as needed. (After about 10-15 minutes, flip them for even baking.)

Remove from the oven and let cool.

Once cooled, remove from the mold. Enjoy these delicious pineapple cakes with a hint of pineapple aroma with some black tea for a leisurely afternoon tea.
