[Heinz Ketchup] Tomato-Braised Beef Short Ribs

Many people probably have or have had a bottle of Heinz ketchup in their fridge! It's great for tomato-braised meats, tomato meat sauce pasta, sweet and sour ribs, and kids' favorite tomato fried rice. This time, I braised beef short ribs, but you can also use beef back ribs or other meats suitable for braising. Sauté the onions until translucent, cook the tomatoes until almost mushy, then add Heinz ketchup and their tomato paste, which I also love. Add a generous amount of chopped celery for a nutritious boost!
Tips
* If using a cast iron pot, you can use slightly less water, as less will evaporate.
* The onions and tomatoes will have a sweetness after being sautéed; the ketchup is salty, so adjust the seasoning after mixing in the ketchup and tomato paste to decide how much salt or sugar to add (I didn't add sugar).
The same broth works well with chicken or pork ribs too~
Thoughts after eating
* If you have time, let the whole pot sit overnight for the flavors to meld even more.

Dice the onion, tomato, and celery. Pat the beef short ribs dry.

Heat a pan and add 1 tablespoon of oil. Sear the beef short ribs to lock in the juices.

After removing the ribs, use the same pan to sauté the onions until translucent, then add the diced tomatoes. Cook until the tomatoes are slightly mushy.

Add the seared ribs and diced celery, pour in water until it covers 90% of the ribs. Add the ketchup and tomato paste. Once it boils, reduce to low heat, cover, and simmer for about 40-50 minutes (adjust time based on the size of the beef pieces; use a chopstick to check tenderness). Remove the lid, increase to medium heat, and cook until the sauce reaches your desired thickness.

With meat, plenty of vegetables, and sauce, it's flavorful enough to serve with bread, or over pasta or rice.
