Steamed Tofu Shumai with Ground Pork (Seiro Style)

The firm tofu soaks up all the delicious flavor from the ground pork! These shumai are light and fluffy—you’ll want to eat a bunch. Enjoy them with a dipping sauce of soy sauce or mentsuyu and vinegar.

I’ve made tofu shumai before using shredded cabbage instead of wrappers, or adding shrimp, all steamed in a bamboo steamer. This time, I used shumai wrappers to make tofu shumai with ground pork and firm tofu.
Steamed Tofu Shumai with Ground Pork (Seiro Style)

Wrap the firm tofu in paper towels and let it sit for a while to drain excess water, changing the paper towels a few times as needed.

Place the drained tofu in a bowl and mash it well with a masher or your hands until very fine.

Add the ground pork, finely chopped onion, soy sauce, salt, black pepper, sesame oil, grated ginger, and potato starch to the bowl.

Mix everything together well by hand.

Wrap the meat mixture in the shumai wrappers.

Line two bamboo steamers with parchment paper. (Used 7-inch / 18 cm diameter steamers for this recipe.)

Arrange the shumai in the steamers, spacing them so they don’t touch each other.

Fill a pot with plenty of water and bring to a boil over high heat. Once steaming, stack the two steamers on top, cover, and steam for 10 minutes.

Adjust the heat so the flames don’t go beyond the pot, and make sure the water doesn’t boil dry while steaming.

When done, turn off the heat, remove the lid, and serve the steamers on a plate with dipping sauce on the side.
