Mix all the crust ingredients together.
Spread the dough evenly in the baking pan of your choice.
Bake for 15 minutes at 350°F (180°C).

Soak the gelatin sheets in cold water.
Blend the speculoos cookies with the Greek yogurt or fromage blanc.
Whip the heavy cream until stiff peaks form.

Melt the gelatin in a saucepan with 2 tablespoons of water.
Vigorously mix the Greek yogurt or fromage blanc with the speculoos mixture and cream cheese.
Add the melted gelatin and mix well. - 4
Gently fold in the whipped cream.
Pour the filling into your pan lined with acetate or parchment paper.
Decorate as desired and refrigerate for 3 hours.

Carefully remove from the pan and serve.
