Wash the kabocha squash thoroughly and cut it open.

Cut the kabocha into small pieces. You can keep the seeds and cook them together, or remove them if you prefer.

Prepare the pork belly and a few slices of ginger.

Heat a pan and sauté the ginger slices until fragrant.

Add the pork belly slices to the pan and stir-fry.

Stir-fry the pork until it is halfway cooked.

Add the seasonings and continue to stir-fry.

Rinse the shirataki noodles thoroughly.

Add the shirataki noodles to the pan and stir-fry.

Simmer until everything is cooked through. Turn off the heat and serve.

* If you don't like pork belly, you can substitute with sliced chicken. For a vegetarian version, use fried tofu instead.
