This is a food network recipe. I halved all the ingredients. If you use the amounts listed it would be a great dish for a potluck meal. Ingredients

20-30 minutes

4 cupscooked rice
1 1/2 cupsPepperjack cheese shredded
1 1/2 cupscorn frozen or canned (drained)
2/3 cupsmilk
1/2 cupssour cream
1/2 cupthinly sliced scallions (I used diced onion)
1 (4 ounce)jar roasted red peppers drained and diced I was out of roasted peppers and used diced red peppers)
1jalapeño seeded and diced
Salt and cayenne pepper (feel free to omit)
Paprika for sprinkling

20-30 minutes

Preheat oven to 350 degrees Fahrenheit

Combine all ingredients in a large bowl (reserve some cheese for topping)

Put in a buttered 9 x 13 baking dish.

Bake 20-30 minutes until top is golden. Top with paprika
