This is a food network recipe. I halved all the ingredients. If you use the amounts listed it would be a great dish for a potluck meal. This recipe is adaptable use a milder cheese and less hot spices.

Ingredients

20-30 minutes

  • 4 cupscooked rice
  • 1 1/2 cupsPepperjack cheese shredded
  • 1 1/2 cupscorn frozen or canned (drained)
  • 2/3 cupsmilk
  • 1/2 cupssour cream
  • 1/2 cupthinly sliced scallions (I used diced onion)
  • 1 (4 ounce)jar roasted red peppers drained and diced I was out of roasted peppers and used diced red peppers)
  • 1jalapeño seeded and diced
  • Salt and cayenne pepper (feel free to omit)
  • Paprika for sprinkling

Steps

20-30 minutes
  1. 1

    Preheat oven to 350 degrees Fahrenheit

  2. 2

    Combine all ingredients in a large bowl (reserve some cheese for topping)

  3. 3

    Put in a buttered 9 x 13 baking dish.

  4. 4

    Bake 20-30 minutes until top is golden. Top with paprika
