Ingredients

40 minutes
15 balls
  • 2 CupsCooked Rice
  • 1Small Onion Finely Chopped
  • 2 TbspBell Pepper Finely Chopped
  • 1 CloveGarlic Minced
  • 3 TbspCoriander Chopped
  • 1/2 tspSalt or to taste
  • 1/2 tspBlack Pepper or to taste
  • 1/2 tspRed Chilli Flakes or to taste
  • 1/2 cupBreadcrumbs
  • 1 Cup/ 112 g Mozzarella Cheese Shredded
  • 2Medium Eggs
  • 1/2 cupAll-purpose Flour or as needed
  • 1/2 cupbread crumbs or as needed
  • Vegetable Oil For Frying

Steps

40 minutes
  1. 1

    Take a large bowl to add 2 cups of leftover cooked rice mashed well.
    Add one small size finely chopped onion,finely chopped bell pepper and one clove of minced garlic in rice.

    Add Chopped coriander,Salt,Black pepper,chilli flakes and 1/2 cup bread crumbs.
    Add a 1 cup of shredded mozzarella in a bowl.Add one medium size egg for binding and mix well.

    Grease your hands with oil and make medium size balls.
    In Plate add 1/2 cup of all-purpose flour,1/2 cup of breadcrumbs and the remaining egg, cracked the egg in a bowl and whisked well.

    Take a ball, cover it with flour then dip in an egg and coated with breadcrumbs do the same processes with the others balls then Refrigerate coated balls/arancini for 15 minutes.

    Heat the vegetable oil at medium-high heat for deep fry arancini.
    Fry the balls until golden brown.

    Serve these balls as an appetizer before a meal or with the evening tea, however, you prefer with your favourite sauce.
