#GlobalApron2024 week 8 leftover rice. My family is neutral on rice take it or leave it. They all had more than one helping of this and even commented on how good it tasted. This is a food network recipe. I halved all the ingredients. If you use the amounts listed it would be a great dish for a potluck meal. This recipe is adaptable use a milder cheese and less hot spices.

Ingredients

  1. 4 cupscooked rice
  2. 1 1/2 cupsPepperjack cheese shredded
  3. 1 1/2 cupscorn frozen or canned (drained)
  4. 2/3 cupsmilk
  5. 1/2 cupssour cream
  6. 1/2 cupthinly sliced scallions (I used diced onion)
  7. 1 (4 ounce)jar roasted red peppers drained and diced I was out of roasted peppers and used diced red peppers)
  8. 1jalapeño seeded and diced
  9. Salt and cayenne pepper (feel free to omit)
  10. Paprika for sprinkling

Cooking Instructions

20-30 minutes

    Preheat oven to 350 degrees Fahrenheit

  2. 2

    Combine all ingredients in a large bowl (reserve some cheese for topping)

  3. 3

    Put in a buttered 9 x 13 baking dish.

    Bake 20-30 minutes until top is golden. Top with paprika
