Prawn Mushroom Curry

In a mixing jar grind grated coconut and onion together. Now keep this mixture aside.

Now take the prawns, clean them, then add salt and turmeric powder. Coat the prawns well with salt and turmeric.

Now heat a pan. Add some oil and shallow fry the prawns. Now keep them aside.

Now clean the pan once then again add about a tbsp of oil and add the cleaned & chopped mushrooms in it. Fry them well for about 7 to 10 minutes and keep this aside.

Now take another pan, heat it and add 2 to 3 tbsp of oil (refined/mustard). Then add all the khada masalas mentioned above like jeera, bay leaf, black cardamom, green cardamom, cinnamon sticks, dried red chilli & even few curry leaves. Now let them splutter for a while.

Then add grinded onion and coconut paste (mentioned above in step 1) in it. Fry them for about 2 minutes.

Then add ginger-garlic paste in it and mix it well. Again fry the masala for the next 2 to 3 minutes. Then add all the dry masalas like turmeric powder, cumin powder, coriander powder, salt & sugar. Give everything a good mix.

Then add tomato paste or tomato puree in it. Mix everything well and fry the masala on a low flame for about 4 to 5 minutes or until oil starts releasing from the masala.

Then add the fried mushrooms and fried prawns in it and coat them well with the masalas. Fry them well with the masalas for the next 1 to 2 minutes.

Then add 1 and half cup of lukewarm water in it. You can adjust the water consistency as per your requirement. Gently mix everything well.

Now cover the pan with a lid and cook it on a low flame for about 5 to 7 minutes. Keep checking and stirring in between. Now open the lid, check the salt consistency.

Then add a tsp of garam masala and mix it well. Now finally add some chopped coriander leaves and let it cook for another 1 to 2 minutes. Then serve it hot with some steamed rice.
