Oatmeal and Apple Cookies

These ultra-light cookies remind me of my mom ❤️. In the last years of her life, she needed a strict diet where refined carbs and sugars were banned. For her, giving up sweets was a real sacrifice, so I found this recipe online and modified it to meet her nutritional needs. Made with oats, apple, and sweetened with raisins instead of sugar, these cookies are soft, tasty, and light. They've become my favorite cookies ❤️.

Ingredients

10 minutes + baking time
makes 15 cookies
  • 2/3 cupoat flour (about 70 grams)
  • 1/3 cuprolled oats (about 30 grams)
  • 1egg
  • 1sweet apple, such as Pink Lady
  • 1heaping tablespoon raisins
  • 1 teaspoonbaking powder
  • 1 teaspooncinnamon

Steps

10 minutes + baking time

    In a bowl, combine the oat flour (I blended the oats to make flour) with the rolled oats, egg, raisins (previously soaked in water, or in a liquor of your choice if desired), baking powder, and the apple, peeled and grated using the large holes of a grater.

  2. 2

    Stir with a spoon to mix everything together. For cooking, I used an air fryer. Line the air fryer rack with parchment paper and, using a spoon, scoop out half a spoonful of the mixture and place it on the parchment paper. Cook at 340°F (170°C) for 10 minutes, checking the cooking and turning them to cook on the other side. The same method applies to a conventional oven.
