Andhra Avakaya or Raw Mango Pickle is a rage here in down South amongst the Pickle lovers. It's absolutely easy and effortlessly done. It's just that the measurements should be exact and in no way other than that. This should be kept in mind when this beautiful looking Pickle is done.
Make a powder of Mustard and Fenugreek seeds without roasting. It's not needed. This recipe can be doubled or tripled as per one's requirements.

Avakaya or Raw Mango Pickle is a perfect choice for mealtimes. It's relished with Ghee and simple boiled Rice on each single day by the Pickle lovers. The Red Chilli powder used should be of Guntur Red Chillies or Bydagi Chillies if one could lay their hands upon them. Otherwise any good Red Chilli powder can be used in place of them. The spectacular colour of this flavourful Pickle is due to the presence of Guntur Chillies. So please keep that in mind. The rest is just grab a steaming hot bowl of simple boiled Rice and Ghee or Clarified Butter to go alongside this beautiful Pickle.

  • 2 kgRaw Mangoes
  • 100 gmwhole Garlic cloves
  • 100 gmBlack Mustard Seeds
  • 1 tbspFenugreek seeds
  • 200-250 gmRed Chilli powder/Guntur Chilli powder
  • 300-350 gmSalt
  • 1 kgFortune Groundnut oil

Steps

    Wash and pat dry all the raw mangoes at first. Cut them into equal sized cubes. Do not remove or peel the skin. Just discard the seed and the seed coat.

    Meanwhile add all the ingredients mentioned to a wide vessel or a deep plate. Add the cubed mangoes to it. Use gloves or do it with thoroughly washed and clean dry hands.

    Mixing it with hands is absolutely recommended. This allows equal and proper mixing of the spices. Cover and set aside for a night in a dry and airy place in the kitchen.

    Next day, before transferring it to a ceramic pickle jar, check for the spice level. If required, adjust the spices. Transfer it to a clean and sterilised pickle jar.

    Cover and keep it undisturbed for 3-4 days. The Avakaya Pickle is ready in 3-4 days. But give it a good standing time of atleast a Week for best results. Enjoy!

That's great. Yes. You are right. They are really hot. 😊 Thank you for letting me know as well. Bydagi are not similar to Kashmiri in spice quotient but are mostly preferred for their colour much similar to the Kashmiri Chillies.
