Blackberry season is so short in my area, there’s never enough to make jelly/jam. I make this pie filling and water bath can, usually 1 to 2 jars at a time to enjoy later. #GlobalApron 2024

Ingredients

  1. 2 pintsfresh blackberries
  2. 1/4 cupwater
  3. 1/4 cupgranulated sugar
  4. 1/4 tspsalt
  5. 1 Tbspcornstarch
  6. 2 Tbsplemon juice

Cooking Instructions

  1. 1

    Stir together the water, sugar, salt, and blackberries in a saucepan. Stir over medium heat until the berries begin to pop and release their juices. This usually takes about 6-7 minutes. Once this happens, reduce the heat to low.

    Whisk together the cornstarch and lemon juice to make a slurry. Slowly stir it into the blackberry mixture.

    Cook and stir for 3-5 minutes or until the sauce thickens.

  4. 4

    Remove from the heat and let cool to room temperature. Swirl it into a cheesecake or bake it in a pie.

I love to bake sweet stuff, with a bit of savory tasty cooking thrown into the mix. Just good ol’ southern cuisine. Most of my recipes were handed down from my Great & Grand Grannies. If they didn’t grow it or raise it, it wasn’t eaten. My hubby and I have alot of food allergies so it gets challenging sometimes to make things that we both can eat. Neither of us can eat shellfish, which is sad, considering where we live, cuz it’s everywhere! Y’all won’t find any shellfish /saltwater fish recipes here. Some fresh water fishes, maybe. Hope y’all enjoy my recipes!
