Easy Spicy Ginataang Manok
Ginataang manok with a sweet twist.
Steps

Wash and pat dry the chicken.
Chop the garlic, onion, ginger, green chillies, red capsicum, and potatoes into medium-sized pieces.

Heat a pan over medium heat, add oil, then add the potatoes and cook until light brown.

When the potatoes are golden brown, take them out and set them aside. Then, add ginger, garlic, and onions to the pan and sauté until you can smell the aroma. Then add in the prepared chicken.

Add the fish sauce, sugar and crushed pepper to the pan and cover it for about 5 minutes.

Combine water and powdered coconut milk into the pan, stirring continuously. Allow the mixture to simmer until it reaches a slightly creamy consistency. Add the potatoes and simmer until they begin to soften. Finally, add in the green chilies and red capsicum.

Add some vinegar and put the cover for about 5 minutes.

Season with salt, sugar and pepper to your preference.
