Global Apron week 11, cook with may ingredients( peas 🫛). Baked peas bags that is baked till golden crisp are kids & adults special favorite snack, they are equally fond of eating cheese, when cheese is artfully mixed with peas & carrot stuffing in these bags, then the combination ought to be delicious.
They can even be served as starters for house parties.

For dough: in a mixing bowl 🥣, add plain flour, salt, baking soda, semolina, oil 🌻 mix gently, add water 💧 as required to from a firm dough, knead a dough that is not too soft or hard, cover it with a moist kitchen towel and keep aside.

For stuffing: heat oil, add cumin seeds & fennel seeds cook for 1 sec, add ginger paste 🫚/ finely chopped mix well, cook for a sec, add finely chopped carrot 🥕 just stir, add mashed peas 🫛 mix well, cook on low flame, add green chillies paste, salt 🧂, kashmiri red chilli powder 🌶️, coriander powder, cumin powder and mix well, add finely chopped green capsicum 🫑 and mix well, cook for 2-3 mins.

Add rosemary 🌹🌱, and mix well, remove from heat, add garam masala powder, dry mango powder, finely chopped coriander leaves 🌿 and mix well, let it cool completely, when cooled finally add mozzarella cheese 🧀 and mix well, stuffing is ready, keep aside.

For making bags: knead the dough lightly again and make small round balls out of the dough, roll out on lightly floured surface till 5 " diameter, add 1-2 tsp of prepared stuffing in the center, close and give shape of a bag (shown above), repeat for all the balls of dough as you go on making them, cover them with kitchen towel,so that the outer cover does not dry out.

Preheat the oven at 180°c, brush all the bags with oil on all sides, bake for 30-35 mins or till the crust is golden brown and crisp, serve hot with green chutney & fried green chillies.
