This is a quick recipe I made today after returning from a long trip with an almost empty fridge and zero desire to cook. I was surprised by how good it turned out for how little effort it took. I'll definitely make it again!

Ingredients

  1. 1-2 cupspre-cooked quinoa
  2. 1 cantuna
  3. 2 clovesgarlic
  4. 1egg
  5. 2 tablespoonssoy sauce
  6. Parsley and pepper to taste

Cooking Instructions

    In a pan with a little oil, sauté the garlic. You can chop it finely or leave the cloves whole to remove them later after they've flavored the oil.

    Once the garlic is golden, add the can of tuna, draining the oil if necessary. Stir a couple of times and add the cups of quinoa (you can also heat them in the microwave). Add the soy sauce, a pinch of pepper, and chopped parsley, mix well, and plate.

    Top the quinoa with a fried or grilled egg and it's ready!
