Preheat oven to 425 degrees

Wash and peel potatoes, I left my skin on. Cut them however you like and season with salt, pepper, and a generous amount of onion powder.

Set aside potatoes and prepare the cheese roux. Add 1 cup of cheese, pepper & smoked paprika to the roux.

Add sliced potatoes to a greased nonstick pan, I lined my pan with foil for an easier clean up. Pour roux over the potatoes and bake covered for 30 minutes.

Remove pan and add cheese, bacon bits, and bake uncovered for an additional 15 minutes or until the cheese has melted and browned.
