Dice the onion and sauté it in a little olive oil until the onion is golden brown. Add the tomato to the onion and cook until it softens slightly.

Add 1 cup of lentils, the spices, and salt. Pour in 2 cups of water (about 480 ml) and let it cook for about 15 minutes, until the lentils are tender.

Once the lentils are cooked, blend the mixture in a blender until completely smooth. Return it to the pot, bring to a gentle boil, and add water as needed to reach your desired soup consistency, whether light or thick. Once done, turn off the heat.

Serve with toasted bread and lemon. Enjoy!
