This is small variation in variety rice ,which can be made very easily .Stir fry Brinjals add with some masala and rice makes the dish ready .

Heat a pan and add all the garam masala ingredients and dry roast on a slow flame.We have to make it into coarse powder.

In pan add ghee,when ghee is hot add mustard seeds and allow it to splutter then add jeera (cumin seeds),add cashnew nut and green chillies also.When cashew nuts gets the colour add the chopped length wise brinjal.Add pinch of turmeric just for colour.

Cook the brinjal for some time, then add the ground masalas and toss it with the brinjal.

In this we add cooked rice.Then toss this rice nicely so that all the masala will get mixed.Switch off the flame.Garnish with curry leaves and coriander leaves.

Serve hot with some curd or pickle.
