Toss the finely chopped onion with the potato starch (or cornstarch).

Add the ginger and all ingredients marked with ★ to the ground pork. Mix well, then add the onion mixture from step 1 and mix until sticky and well combined.

Wrap the filling from step 2 in the shumai wrappers. Make a circle with your thumb and forefinger, place a wrapper on top, and use a spoon to press the filling into the center.

Place a steaming rack in a skillet and add enough water so it doesn't touch the rack.

If you don't have a steaming rack, line the skillet with parchment paper, place the shumai on top, and pour water under the parchment paper.

Turn on the heat. Once the water boils, steam over high heat for 13 minutes. Done!
