  1. 2 cupswhole milk (500 ml)
  2. 1cinnamon stick
  3. Peel of 1 lemon (yellow part only)
  4. 4egg yolks
  5. 1/2 cupsugar (100 grams)
  6. 2 1/2 tablespoonscornstarch (20 grams)

    Bring the milk to a boil with the lemon peel and cinnamon stick. Once it starts boiling, turn off the heat and let it sit for about 10 minutes to infuse the flavors.

    Meanwhile, beat the sugar and egg yolks together with an electric mixer until the mixture is pale. Add the cornstarch and mix until smooth with no lumps.

    Bring the milk back to a boil without removing the lemon peel or cinnamon. Lower the heat and add the egg mixture, stirring constantly with a wooden spatula for about 30 seconds.

    Once the mixture thickens, strain it to remove the lemon peel, cinnamon stick, and any lumps. Pour into small clay dishes and let cool. When ready to serve, sprinkle sugar on top and caramelize it with a kitchen torch or hot iron. Enjoy!
