Ingredients

1 serving
  1. 1 portiontortiglioni (uncooked)
  2. 1small avocado (ripe, peeled and deseeded)
  3. 1garlic clove (minced)
  4. 250 gsilken tofu
  5. 1 handfulbaby spinach
  6. 1 1/2 tbsplemon juice
  7. 1 tbspolive oil
  8. 1/4 tspsalt
  9. cherry tomatoes (halved)
  10. parmesan cheese (grated, optional)
  11. red pepper flakes (optional)

Steps

  1. 1

    Cook pasta as per packaging instructions. Drain, reserving some pasta water, then set aside.

  2. 2

    Add avocado, tofu, lemon juice, garlic, salt, olive oil and spinach to a blender. Blend until smooth, adding a touch of pasta water if needed to make the sauce more smooth.

  3. 3

    Transfer the sauce from blender to a pan/skillet and heat on low. Then, stir in cooked pasta and mix well with the sauce.

  4. 4

    Turn the heat off, then stir in tomatoes.

  5. 5

    Serve with grated parmesan and red pepper flakes, if desired.
