Tortiglioni in Avocado, Spinach and Tofu Sauce

Cook pasta as per packaging instructions. Drain, reserving some pasta water, then set aside.

Add avocado, tofu, lemon juice, garlic, salt, olive oil and spinach to a blender. Blend until smooth, adding a touch of pasta water if needed to make the sauce more smooth.

Transfer the sauce from blender to a pan/skillet and heat on low. Then, stir in cooked pasta and mix well with the sauce.

Turn the heat off, then stir in tomatoes.

Serve with grated parmesan and red pepper flakes, if desired.
