  1. 2Oranges (Juice)
  2. 2Oranges (Zest)
  3. 200 gsugar
  4. 225 mlvegetable oil
  5. 2eggs
  6. 150d 0% fat greek yoghurt
  7. 1heaped tsp baking powder
  8. 1 tspvanilla extract
  9. 300 gfilo pastry shredded into small bits
  10. Syrup
  11. 2 cupssugar
  12. 1 cupwater
  13. 1cinnamon stick

  1. 1

    Juice the Oranges and set aside

    Preheat oven 170’ C fan

  3. 3

    In a bowl whisk together sugar, oil and eggs until combined. Then add the orange juice, zest and yoghurt and whisk until combined

  4. 4

    Add the shredded filo pastry to the wet ingredients along with the baking powder and vanilla extract. Stir to combine

  5. 5

    Pour mixture in pre greased baking dish and bake for 45min until cake solidifies and becomes golden brown on too

  6. 6

    In a saucepan add the sugar water and cinnamon stick and bring to a boil

  7. 7

    Once the cake is cooked carefully pour over the syrup and leave to cool before serving
